Happy Friday!

Can you believe it’s already almost Thanksgiving? I love Thanksgiving SO much. Several years ago I bought THIS set of dishes and I only get them out at Thanksgiving. Over the years I’ve bought matching pieces like a gravy boat and a tea pot. It’s nice to have something special to use during our special meal.

I will start my cooking Wednesday. We go to a big Thanksgiving with my husband’s family at around noon, then we go home and eat as a family in the evening. It’s nice to have most of the food ready so I can just pop it in the oven. This sweet potato casserole, these mashed potatoes, and this pie are three of our staples and can all be prepped ahead. Makes for a fairly relaxing Thanksgiving! I also make Lefse, which is a tradition in my husband’s family. It’s a Norwegian flatbread (very thin like a tortilla) made with potatoes and flour. It’s SO good, especially hot right off the griddle. We love to spread butter on it and wrap it around a piece of turkey. So good!
