raisin bran + grapenut muffins


My schedule has been hectic lately and I find myself running out the door in a hurry each morning, but I've made a few batched of these muffins and they're downright yummy. I found the basic recipe on the side of the cereal box and added grapenuts since I had bought them for another recipe.


ingredients:
3/4 cup milk
1/4 cup olive oil
1 egg, beaten
1 1/2 cups raisin bran
1/2 cup grapenuts
1 cup all purpose flour
2/3 cup sugar
2 tsp baking powder
1/2 tsp ground cinnamon

directions:
Preheat oven 400 degrees Fahrenheit.
Line 12 muffin cups with paper muffin wrappers.
Combine milk, oil and egg in a bowl and stir in cereal; let stand for 10 minutes.
Combine flour, sugar, baking powder, and cinnamon in separate bowl.
Add cereal mixture to flour mixture and stir until just moistened.
Divide evenly among muffin cups.
Bake 25 minutes or until toothpick comes out clean when inserted in muffins.
Remove from oven and allow to cool before storing in air-tight container.

They're especially tasty, if you nuke them for 15 seconds and put some butter on them!
