Magic Double Chocolate Brownies and a Writers Block


Its been a long and hot month. Crazy does not even come close to describing it.


Three trips out of town within one month ,a cartilage injury and a bruise and overwork, to top it all ...a blackout.
I have never experienced a writer's block . Ever.
Well, writer's block is quite common. That is when the song Words Don't Come Easy to me plays and replays in my ears.
Unfortunately for me, I am not a music Man. And melodies are not my best friends, my best friends are my spatulas and my whisks and my spice bottles and my ovens..

Yes ,I have two.
North India is experiencing an unprecedented heat wave these days and food is far from our minds.
But lately, a craving for chocolate has raised its head. Sweet Child and I crave something cold and chocolate and frosting free and baked and crunchy.
To the rescue, Double Chocolate Brownies with Magic.
That magic was what we craved.
Chocolate and Salt and cocoa and butter and white chocolate and vanilla, life could not be better.
The only mistake I made was that I did not line the pan with baking paper. So my brownies were not perfect.
So don't you do the same thing.

Try this and see how right Heston Blumenthal is about salt and chocolate.

Magic Double Chocolate Brownies

You need88

240 gms butter - Amul Butter it is ..
150 gms dark chocolate
1/4 cup cocoa powder
1 1/ 4 cup flour
1 tbsp vanilla essence or extract
2 eggs
2 cups sugar - I used 1 1/2 cups only
3/4 cup white Chocolate Chips (I chopped regular white chocolate to make chunky chips)
1/2 tsp salt -sea salt if you have it...I used Tata salt

Start with the butter and the dark chocolate (that you must chop) in a large saucepan.

On low to medium heat melt both to a shiny disco kind of shimmering liquid that you can slather on your self as a mask . Seriously.


Once done , add in the cocoa powder and the vanilla essence and blend it well.

Add in the sugar and mix.

By now ,the mix should be cool enough to add in the eggs without scrambling them.

So do that now.
Turn the oven on to 180C and grease ,flour and paper your baking dish .8 inch square or 6 by 12 rectangular dish. What ever.
The most important thing is the paper.

Now tip in the flour and the salt and mix partially.


add in the white chocolate chips and blend well.

Now scrape out the thick batter into the prepped dish ,smooth the top and slide into the oven for 40 to 45 minutes.
The top should be crackled like crispness and the aromas should be heady crazy 100 % chocolate.
Dig a toothpick in to check it for doneness.
Bring it out and let it cool on a wire rack.
Only then turn it into a platter and peel off the paper and turn it again.
Eh Voilà, and its ready to serve.

Cut small squares and do the oohs when you see the darkened bits of white chocolate in and don't really bother to open your eyes when you taste it.
Yes ,you are in brownie heaven and this is indeed Magic.
