Menu Plan Monday #ExtremeVeganYumminess

Well, the weather continues to get warmer in sunny central Florida. Right now, the computer says it’s 87 degrees outside. So far, I’ve managed to avoid turning on the a/c, but I won’t be able to for much longer. Hello $500 power bills! *sigh*

I’d much rather enjoy cooler temperatures for a while longer, but as long as I live in Florida, that’s just not gonna happen. The upside to all that hot weather? I can feed my family more cold meals and salads without complaint! Yay!
