THISISPAPER x NOT TODAY: The Kitchen


It's no secret to anyone who's ever made an attempt to cook a meal that getting the right ingredients greatly increases your chances of the food actually being edible. By "right" we mean not only the ones that are listed in the recipe ­ that would be way too easy. Right means that they're fresh, healthy and locally grown, and that growing and buying them not only causes the environment no harm, but also lets farmers in your community support their businesses. The place in Warsaw where such products can be found is called Bio Bazar. This weekly market occupies a hidden spot in the Wola district, but is no longer a mystery to the city's inhabitants. On the contrary, crowds visit it every Saturday, making it a lively destination, as good for shopping as for people watching. We headed there to get what we needed for the lunch and came back home utterly satisfied with what we got: fresh and smoked salmon, chicken, potatoes, beet roots, cottage cheese, carrots, onions, and bread. Sounds like a list that could turn into almost any dish, but we decided to go for traditional Polish food with a twist.
