Roasted Brussels Sprouts

I asked for some Brussels Sprout inspiration from my Facebook page, and I got tons of great ideas. I’m definitely bookmarking a lot of those suggestions! In the end, I decided to keep it super simple, since I was taking this to our small group dinner. Sydney suggested roasted with salt and pepper and olive oil and that sounded perfect to me!

I don’t know why b-sprouts get such a bad reputation. I think they’re quite delicious.

Roasted Brussels Sprouts

  • 1 lb Brussels sprouts
  • 3 tbsp olive oil
  • 5 cloves garlic
  • Salt & pepper

Preheat the oven to 400. Rise and dry the sprouts. Cut off the brown stems and then slice each sprout in half. Peel the garlic and rub the pan with the garlic cloves. Toss the sprouts with olive oil and salt and pepper. Spread the sprouts and the garlic across the pan and roast for 35 minutes, flipping them halfway through. They should get brown and a little crispy on the outside. Add a little more salt and pepper to taste.

It really doesn’t get easier than that. I think I might start making these more often! (Sorry, Alex…)

Last night, however, no Brussels sprouts were consumed. Instead, I just ate lots of delicious bites from The Tobacco Company, who hosted a blogger happy hour for us last night. We had a little Virginia Bloggers party, and it was so fun getting to meet some new-to-me bloggers in the area.

We didn’t get a whole group shot, but Sydney got this one of a handful of us. It was so fun getting to hang out, drink champagne, and talk about blogging! Thanks to everyone who came out last night!
