Chocolate Almond Granola

Thank goodness for friends. Friends who don’t mind if I’m baking granola while we’re chatting. Friends who pour me a glass of wine without asking me if I need one. We should all have friends like this.

Goodness, it’s been a bit of a stressful week. I think it would have been fine under normal circumstances, but after hours work events, packing up my room for a partial move, and a lengthy wedding to do list, all combined with a lingering head cold… I was on the edge.

Luckily, Lindsay and Kate were on board with a wine night and I made granola while we chatted. This is honestly, probably the most soothing activity I could think of (although filling up box after box for Goodwill didn’t hurt either…)

It was just what I needed.

This recipe isn’t very creative. I’m not throwing in a strange ingredient. It’s not overly healthy. It’s simple. And you could make it while chatting with your friends. Because you could use 1/2 of peanut butter or 1/3 of peanut butter and it’ll still be just fine.

Serves: 12
Easy and delicious granola.
Ingredients
  • 4 cups of rolled oats
  • 2 tbsp chia seeds
  • ½ cup pure maple syrup
  • ½ cup chocolate chips
  • ½ cup peanut butter
  • ½ tsp salt

Instructions
  1. Preheat oven to 350.
  2. Combine the oats, chia seeds, maple syrup, chocolate chips, peanut butter, and salt in a large mixing bowl.
  3. Be sure that the maple syrup gets well distributed over the oats.
  4. Spread over a large cookie sheet or a 9 X 13 pan. It doesn’t have to be a thin layer.
  5. Bake at 350 for 25 minutes. Let cool, and eat! You can store it in an air tight container for a week or two.
