Frugal Fridays- Spicy Peanut Stir Fry

Hello from Minnesota! Alex and I flew back late last night and we’re spending some time with Alex’s family. I’m so excited to be back for a visit. His family is awesome and I’m sure we’ll be fitting in some fun nights with friends & card games.

I enjoyed your comments on last week’s Frugal Fridays post and I’m glad I’m not the only one who is trying to save money at the grocery store! (I mean, who doesn’t want to save money?) So let’s jump back in with another healthy & budget friendly recipe.

This week, let’s do a stir fry with a spicy peanut sauce! Stir fry dishes are a great way to use up all of those leftover veggies sitting in your fridge. Feel free to sub in whatever you have on hand. (Zucchini, snap peas, bean sprouts, cabbage… any of that can be tossed in!) I usually like mine with just noodles and veggies but if you want a little extra protein, you could add in tofu, tempeh, or chicken (if that’s your thing) and you’ll still be able to fit it in the $10 budget.

Spicy Peanut Stir Fry Ingredients

  • 1 box rice noodles- $1.50
  • 2 tbsp peanut butter- $0.20
  • 1/4 cup low sodium soy sauce- $.50
  • 1/4 cup honey- $0.75
  • 1 head broccoli- $2.50
  • 4 large carrots- $1.00
  • 1 package of tempeh or tofu- $4.00 (optional)
  • Spices* & olive oil

You can substitute sriracha or hot sauce curry for the red pepper curry paste if you don’t have any on hand! Making substitutions, rather than buying something new, is a great way to save a few bucks.
