Tex-Mex Chicken Corn Tortilla Casserole


This is a simple, weeknight, no-time supper that is delicious and satisfying. Easily adapted to satisfy spicy or mild preferences (based on the temperature of the diced tomato blend and how many jalapenos are used), this is a recipe that allows for individual tastes to be pleased. If someone likes it spicier, use a higher heat Picante sauce instead of salsa.
I love to cook, but there are times when quick and convenient are the best way to go...and it's always healthier and less costly than eating out. The leftovers are great for lunches, too!




Ingredients:
3 chicken breasts
1 pkg frozen peppers and onions
2-3 c. Salsa or Picante sauce
4 c. Mexican cheese blend, shredded
1 can diced tomatoes with peppers and onions
1/4 c. sliced jalapenos, optional
1 pkg. Corn tortillas
sour cream and guacamole, optional

Directions:
  1. Cook 3 chicken breasts and a bag of frozen peppers and onions in slow cooker for 4 hours on High*.
  2. Shred the chicken and blend with the peppers and onions. Stir in the can of diced tomatoes with peppers and onions.
  3. Coat bottom of 9x13 casserole dish with a layer of your favorite salsa or picante sauce.
  4. Place a layer of corn tortillas over the salsa, covering the bottom of the dish.
  5. Now spread a layer of the chicken/peppers/onions evenly over the tortillas.
  6. Add a layer of cheese.
  7. Now repeat - salsa, tortilla, chicken and cheese layers.
  8. Finish the casserole by adding jalapenos on top, if desired.
  9. Bake for 15-20 minutes at 350 degrees.
  10. Remove from oven. Slice and serve with sour cream or guacamole.
(*Note - you can boil the chicken or purchase a rotisserie chicken or, as I did in this recipe, use a slow cooker. The hubby suggested that even canned chicken would serve! Just remember...you have options when it comes to selecting and preparing the chicken.)
