Pumpkin Chocolate Chip Cake Balls


I think anyone can pretty much agree that the invention of the cake ball has single handedly changed our lives for the better. They are like a little bit of heaven covered in chocolately goodness. I am not a fan of pumpkin pie ... pumpkin bread on the other hand: delicious! I thought I'd combine the "holy crap this is amazingness!" of cake balls with the "how did I eat the whole loafiness?!" of pumpkin bread and magic has been created!


Since Halloween is just around the corner I couldn't just do your basic dip N drop. I added some candy eyes and white chocolate drizzle to create these adorably, spooky mummies. Thanks to my BFF Walmart, I found the perfect Frankenstein green melting chocolates to pair with some traditional Halloween colored sprinkles.

I also grabbed this color coordinating tin, packed it full and dropped it off at a girlfriends house to brighten her day.


Ingredients:
1 package pumpkin bread mix
1 can cream cheese frosting
1/2 package mini chocolate chips
1 package melting chocolates
seasonal decorations

Instructions:
Prepare bread mix and bake in a cake pan using the muffin mix option, let cool and crumble into a large bowl. That's right, demolish the sucker into a billion teenie, tiny crumbs. Mix in mini chocolate chips then mix in can of cream cheese frosting till combined. Place in fridge for 20-30 minutes till mixture becomes firm.

Remove from fridge and scoop out small dough balls {I use a small scoop from pampered chef, then roll in my hands to make nice and round}. Place on lined cookie sheet then refrigerate for another 20-30 minutes till firm.

Melt package of chocolates as recommended, be careful not to burn. Here is a helpful tip: If your chocolate loses it's smoothness due to over heating, mix in 2 teaspoons of Crisco to restore smoothness. Genius! I may have needed to do this. Using two forks roll cake balls in melted chocolate and set on lined cookie sheet to set. Then decorate as desired. Enjoy!
