Meal Plan Monday, No. 57

Note: Many of you know this by now, but for any one new…We focus on a clean-eating, real food diet. I buy organic whenever I can (especially for the produce dirty dozen and dairy/meats) and prepare the cleanest version possible of any recipes I use or link to in the meal plan. We also try to eat meatless meals at least 3-4 times a week. But we also believe in (almost) all things in moderation so we have “treat” meals every one in a while too! :)

I get up to 80% of our food through a local food co-op called Green Bean Delivery that offers (mostly) affordable local/organic options that are delivered right to our door each week. It operates in four states right now, but there are similar services in most areas so do some Googling if it interests you.

Monday: Black Bean and Cheese Tostadas. We top Food for Life Corn Tortillas with black beans, raw white cheddar, diced jalapeños and bake at 425 for 10-12 minutes and top with green onions, salsa and avocado. Super easy and so yummy.

Tuesday: Angel Chicken over quinoa. I make it in the CrockPot and clean up the recipe by subbing a box of Pacific Cream of Mushroom Soup for the golden mushroom canned soup . I make my own Italian seasoning mix and add diced onion, fresh garlic and fresh mushrooms to the slow cooker.

Wednesday: Kale and Mushrooms Quiche with Caramelized Onions & Cheddar

Thursday: Whole Wheat Spaghetti (we like Bionature Organic) with meat sauce and peas (frozen)

Friday: Grilled Caprese Pizza with Herbed Crust and Balsamic Reduction

Saturday: Justin’s Awesome Shrimp and Grits

Sunday: Baked Wonton Tacos (I plan to sub pulled pork for the chicken) and salad with Light Carrot-Ginger Dressing
