I love the combo of Peppermint and Chocolate! These Candy Cane Marshmallow Pops are as easy as they are tasty. I love them on their own but they also make perfect hot chocolate stirrers. Gift them with some gourmet hot chocolate for a great hostess, neighbor, or teacher Christmas gift. That’s what I’m planning to gift to all my kid’s teachers this year!
Since they’re pretty simple, I like to use quality ingredients. I love these Dandies Marshmallows and these Enjoy Life Mega Chunks Baking Chocolate, which are both food allergy friendly products. Both are carried in my local grocery store. I found bags of this crushed peppermint at World Market which made these extra easy to whip up but you could also crush some yourself. For the sticks, I used striped paper straws from Target.
Supplies/Ingredients:
Push each a marshmallow onto a straw. Then melt the chocolate in a bowl in the microwave (or in a double boiler if you prefer stovetop). In the microwave, I heat the chocolate chunks only 30 seconds at a time, stirring in between each 30 second time interval. These chunks took just under 90 seconds to be totally melted. Dip the marshmallows in melted chocolate and then crushed peppermint. Place on parchment paper and let sit at room temp until set (or you can speed up the process in the fridge which is what I do but these are best enjoyed at room temp!).
I had leftover melted chocolate I didn’t want to waste so I spread it onto parchment paper and topped with crushed peppermint to make easy Peppermint Bark. Just pop in the fridge 1-2 hours or until set and then cut/break into chunks.
