Hazelnut Brownies

It’s a bakers sin, I’ll admit it, but I’ve never made brownies before. Everybody loves a brownie but they’re not too high on my sweet tooth list so I’ve never bothered. Seb and I had been invited to a last minute bbq on Saturday to watch some football (which is quite unusual for us) and we had nothing to take. I knew I had 100g butter in the fridge and some leftover chocolate and hazelnuts from these biscuits #$%^^&*() I made a few weeks back however I didn’t check to make sure I had the other ingredients, which was a bit silly. Half way through making these I realised I only have half the flour needed so the resourceful me had to step up. I found some LSA in the cupboard (Linseed, Sunflower seed & Almond mix) and added this to the mixture as a substitute. I’ve never made these before so I was unsure if the mixture looked as it should or it it was the right consistency. Anyway, I popped the tray in the oven and roughly 10 minutes later pulled them out, just when I started to smell them wafting throughout the house. I should have kept them out at this point but I thought they looked a little undercooked so I put them back in for another 5 minutes. The brownies were delicious warm, straight out of the oven but after 2-3 hours I found they dried out a little. After reading up about brownies I’ve since discovered they are better slightly undercooked. Lesson learnt for next time!

Hazelnut Brownies

  • 100g butter
  • 150g chocolate
  • 2 eggs
  • 1/2 cup sugar????
  • 1/2 cup flour
  • 1/2 cup LSA (linseed, sunflower seed & almond meal)
  • 1 tbsp cocoa powder
  • 1tsp vanilla essence
  • 100g chopped hazelnuts

1. Preheat oven to 180C.

2. Melt butter and chocolate together in a small bowl. In a large mixing bowl, add eggs, sugar and beat well until pale????

3. Add chocolate and butter to egg mixture and continue mixing. Add flour, LSA, cocoa powder, vanilla essence and mix until just incorporated. Lastly, add chopped hazelnuts and stir through mixture.

4. Pour onto a lightly greased baking tray and bake in oven for 10-15 minutes (or until you can start to smell brownies throughout the house!).
