Delicious Holiday Season Bread


Every year around the holiday season the magazines and food adverts are all full of yummy recipes. I found this particular recipe when I was flicking through one of them and I thought I’d have to try it. It seemed super tasty, and oh yes – it really was!

This is what you need

  • 500 g quark (10%)
  • 5 dl cold water
  • 2 dl dark syrup
  • 1/2 dl honey
  • 1 teaspoon grated peel of an orange
  • 7 1/2 dl graham flour (450 g)
  • 5 dl rye flour ( 275 g)
  • 4 dl flour (240 g)
  • 1 tablespoon salt
  • 1 tablespoon bicarbonate
  • 1 tablespoon grounded ginger
  • 1 tablespoon grounded clove
  • 1 tablespoon grounded cinnamon
  • 2 teaspoon whole aniseeds

Heat the oven to 175°C.
Put some butter on the inside of 2 bread pans.
Whisk together quark, water, sirup and honey in a large bowl.
Wash the orange and grate the peel.
Mix together all the dry ingredients and the orange peel in the bowl with the rest of the dough.
Put half of the dough in one pan and the rest in the other. Put som rye flour on the top.
Put the pans in the middle of the oven and let them stay for about an hour and fifthteen minutes.
When ready – let the bread cool off before you cut and serve.

I put some dried apricots in my dough and that made it extra yummy! Feel free to put in raisins too or some other dried fruit if you are a true fruit-lover.

Serve the bread with some salty cheese, preferable french blue cheese! Mmmmm… yum!
