Chocolate truffles

I made these for a friend’s birthday a while back and they were a massive success. (I say success, he wouldn’t let anyone else have one so I’m figuring it’s a good thing) and recently I’ve made them for house gifts and they put a big smile on everyone’s faces. I recommend it highly. (And so will your friends)

These are so incredibly easy to make and the best thing about them is that you can use any flavour, any type of chocolate, and it all works wonders. So this recipe is completely adaptable. First time round I made them with a white chocolate centre and a white chocolate and coconut outside. Next with a white chocolate centre and milk chocolate outside. Then some with baileys. Then some with a dark chocolate and coffee outside…. Endless.

Ingredients Needed:

  • 2 cups of white chocolate
  • 1 cup milk chocolate
  • 5 tablespoons of butter
  • 300ml double cream
  • Desiccated coconut (optional)

Method

  1. Start by melting the 2 cups of white chocolate and softening your butter. The most important thing is that you use good quality chocolate. I always use white chocolate with a hint of vanilla because it’s BEAUTIFUL. Mix together and then add the cream and a pinch of salt. It should be completely smooth but if it’s not, put the entire mixture into a pan until it’s totally smooth and creamy.
  2. Once it’s smooth, leave out until room temperature, then cover in cling film and put in the fridge overnight.
  3. The next day the mixture will have set enough to spoon it out and shape into little balls.
  4. Melt the milk chocolate and dip the truffles in. Place onto baking paper, cover in coconut and put in the fridge until set.
  5. That’s it. I promise. So easy. SO GOOD.
