Recipe: Apple Tart

I had a glut of apples that were a bit past their best recently and rather than opting for the usual apple crumble I decided to do something slightly different and make an apple tart. I love pastry so it was a no brainer to make a tart. This recipe I adapted from BBC Good Food is super quick and easy, so you can whip it up in no time if you have guests coming over and it’s delicious with a spot of afternoon tea and some cream. As autumn is nearly upon us it’ll also be perfect with apples coming into season.

This delicious pastry tart is super quick and easy to do, it's a welcome change from the bog standard apple crumble and is tasty warm from the oven with a dash of cream!

Ingredients:

  • 1 pack of puff pastry ready rolled
  • 25g butter
  • 1tbsp caster sugar
  • 3 or 4 Granny Smith apples cored and peeled.
  • 1 tsp of vanilla extract or ground vanilla

Instructions:

  1. Heat oven to 220C/fan 200C/gas 7.
  2. Open puff pastry and put on a baking sheet lined with parchment paper. Lightly score a border all the way around with a blunt knife.
  3. Peel, core and thinly slice the apples.
  4. Layer over the pastry to the border and curl up the edges slightly.
  5. Dot the top with the butter and sprinkle over the vanilla and caster sugar.
  6. Bake for 15-20 mins.
  7. Cut into slices and serve with some cream!
