What’s for Dinner?

I’ve developed a wee bit of a squash problem.

Last week we had acorn squash. Butternut squash. And of course, pumpkin.

‘Tis the season for all the squash. All the time.

The obsession continues on with this weeks meal plan. There’s no stopping me now!

What’s for dinner this week?

Sunday: Baked Salmon Quinoa Butternut Squash Salad

Monday: Pick your egg sandwiches

Tuesday: Spicy BBQ Chickpea and Crispy Polenta Bowls

Wednesday: Spaghetti Squash Crust Pizza

Thursday: Kale and Quinoa Minestrone

Friday: Leftovers

Saturday: Chicken and Roasted Butternut Squash Stir Fry (pictured above)
