Crock-Pot Citrus-Chipotle Pulled Pork

Crock-Pot Citrus-Chipotle Pulled Pork

You cannot go wrong with pulled pork in the slow cooker, but sometimes the options get a little…shall we say boring? So I was sitting around thinking about how I can spice things up a bit and bring a little zest and a new flavor profile to the classic pulled pork recipes.

I love citrus, and so I went with orange simply because it is one of those fruits that I always have in the fruit drawer in the fridge. And then I thought I wanted to add a bit of kick too, so I went with Chipotle peppers in adobo sauce, which offers some spice and smokiness to the meat. And to round it out and add a touch of sweetness I went with bottled barbecue sauce. You just add it all to your crockpot, let it cook until the meat is “fork tender” and shred it up.

I served the pulled pork on some delicious rolls I picked up from the bakery with a side of sweet potato fries. And for us adults – the perfect beer to go with this recipe – Blue Moon beer!

This recipe for Crock-Pot Citrus-Chipotle Pulled Pork is very simple to make with only 4 ingredients preparation time is just a few minutes and then just just dump everything over the meat and cook it.

This recipe makes a good 20 servings. We cooked then froze half in a zippered freezer bag for a quick meal another day (plus a couple of lunches!). This would also be a great recipe to serve at a party or other get together.

Ingredients

1 (3-5 lb.) Pork Shoulder Roast 1 (24 oz.) Bottle Barbecue Sauce 1 (7 oz.) Can Chipotle Peppers in Adobo Sauce (see note) 2 Large Oranges, zested and juiced

Instructions

  1. Place the pork shoulder roast in the bottom of a 6 or 7 quart oval crock-pot.
  2. Meanwhile, in a blender blend together the barbecue sauce, chipotle peppers in adobo sauce, orange zest and orange juice from the 2 oranges.
  3. Pour sauce over meat in slow cooker.
  4. Cover and cook on LOW for 10 to 12 hours or HIGH 5 to 6 hours.
  5. Remove cooked meat from the crock-pot and place on a rimmed baking sheet.
  6. Pour sauce from the slow cooker into a bowl, skim off as much fat as you can from the sauce and set sauce aside.
  7. Allow the meat to rest for approximately 20 minutes and then shred meat away from the bone with a fork.
  8. Place meat back into crockpot and add as much or as little of the reserved sauce to your meat depending on how saucy you like your meat.
  9. Place cooked meat on rolls or buns and serve.

Notes

The spiciness level on this recipe as is leans towards the mild spice. My 4 children ate this just fine without complaint. You don’t really get the spice right away but it is more of a lingering tingle after you eat a bite. If you would like less spice I would just cut down on how much chipotle in adobo sauce you use (maybe 1/2 a can). And of course, if you like it hot, add more!
