Too Busy to Make a Hearty Meal?

With just a few Holiday shopping days left, it’s tough to get it all done some days.

I’ve been making lots of trips to the nursing home to see my dad. (He’s doing okay, thanks.) My work-week days begin at 5AM and I don’t get home until about 8PM. It’s a long day.

For all of us.

My wife has been playing the role of ‘single parent’ lately. She’s been keeping the house looking great, feeding the washer and dryer (all the time) with loads of laundry, and helping Tall Child (our high-school freshman) with homework on an as-needed basis.

Since we are smack-dab in the middle of the Holiday season, we’ve been trying to retain some sort of ‘normalcy’ by putting up the Christmas decorations.

We managed to get TWO Christmas trees up and decorated. Woot!

And our outside decorations are looking pretty good this year, too.

Staying Positive

Some nights, it’s all we can do to get dinner on the table. It’s been a struggle.

I’m not bitter. (Well, not too bitter.) I’m really trying to stay in a grateful and gracious mindset.

Because that’s important to me. Holiday season or not. It’s important.

And it REALLY is the most wonderful time of the year.

My creative wife put this display together. She trimmed off some low-hanging branches of a very tall pine tree we have in the front yard. The extra-large ornaments are from the Dollar Tree.

I love it!

It’s good to know that when my wife and I are out shopping — either together or solo — we can find easy-to-make dinner options that are hearty.

Because, baby it’s cold outside!

With the crazy schedules we’re keeping these days, comfort food (that doesn’t take too much effort to make) is a good thing!

And hey, speaking of comfort food, nothing warms you up quite like a good old-fashioned pot pie.

Marie Callender recently introduced the FAMILY-size chicken pot pie. And they are AWESOME!

Chocked full of big pieces of white meat, they have a nice, flaky crust with lots of peas and carrots too!

{And with the $1.25 coupon we had, it made this purchase a NO-brainer.}

Tall Child turned his nose up at first. Being unfamiliar with a pot pie, he assumed it would taste awful. About two bites into his piece and he was smiling from ear to ear.

And he ended up having seconds!

I love a story with a happy ending.
