A Healthy Soup and Grilled Cheese Makeover

Make Mama’s Soup & Grilled Cheese More Healthy!

I’m going to get a bit personal here (as if I’m not any other day?!) and admit that I am a food addict. I struggle everyday with diet and nutrition. And while I shouldn’t use it as an excuse, I do feel sorry for myself far too often because of the way my picky kids impact what and how I eat. (Or should I say the way that I ALLOW my picky kids to impact the way I eat. I know, I know.) But it can be so hard to cook meals that they like and are healthy for them and appropriate for me at the same time. However, I have found one tried and true quick healthy dinner that suits the entire family and is perfect for Fall, too: good old soup and grilled cheese! Here’s how I “made over” the traditional soup and grilled cheese to make this dinner super QUICK and HEALTHY…

My Super-Simple 5 Ingredient Healthy Soup & Grilled Cheese Dinner:

Yep. Only FIVE (more healthy than my mama made it) Ingredients:

  • 100% whole wheat bread
  • cooking spray
  • sliced mozzarella cheese
  • your favorite Progresso™ Soup (Did you know they have 40 flavors that are 100 calories or less?!)
  • some raw veggies on the side

Here’s how I do it in about 10 minutes:

Choose my favorite Progresso™ Soup from the cupboard (we chose the deliciously Creamy Chicken Alfredo this time), empty it into a small saucepan, and get it cooking over low-medium heat. Yummy, healthy soup: DONE!

My Simple Grilled Cheese Makeover:

Now while the soup’s heating, I put a frying pan on low to warm up. I grab my whole wheat bread – two slices for each sandwich obviously. Here’s my super-quick and healthier grilled cheese trick: Instead of using gobs of butter, just spray one side of each piece of bread with cooking spray! Slap ‘em down in the warmed frying pan sprayed side down. Throw on a couple slices of cheese (I prefer the mozzarella slices over the processed American cheese). Then top with another slice of bread sprayed side UP. (Make sure to stir that soup once in awhile, too!)

Put a lid on and wait a few minutes until the cheese melts and the bottom is toasted golden brown. Then flip those sandwiches to let the other side get toasted, too.

Those sandwiches should be toasty, cheese all melty, and soup all warm and yummy in 10 minutes or less! I serve them on a plate with a side of raw carrots for the kids. But I only usually need the yummy Progresso™ Soup and half a sandwich for my entire healthy meal!
