Turkey Pumpkin Chile Recipe to Ring in Fall

Sounds like a weird combination, I know right? But it is delicious, as in I could eat this all day every day, any day! This is the perfect meal for when the weather is cold, rainy, dreary or otherwise just miserable to be outside. It could just be me but I always crave chili or soup when the weather first turns cold, and since my boyfriend grew 150 pumpkins in his garden this year it’s safe to say I have plenty on hand right now.

This recipe starts out like a simple chili, you could use ground beef but we went with turkey since thats what we ALWAYS use. Plus its much, much healthier! And I really can’t taste the difference by the time you add in all the spices and everything.

What You Need:

1 and 1/4 pounds ground turkey

1 medium onion, chopped

1 bell pepper, chopped

1 packet of McCormick’s White Chili Seasoning (or whatever you prefer)

3 cups of cubed pumpkin

1 15 oz can of black beans drained and rinsed well

1 14.5 oz can of diced tomatoes

1 14 oz can chicken broth

1-2 Jalapeños or Banana Peppers (depends on how spicy you like chili)

Cook the turkey until done then cook onion and peppers, add in spices, let cook down. Add pumpkin, broth, beans and tomatoes. Cook until pumpkin is tender (25-30 Minutes on simmer). After that just season to taste.

Slow Cooker Alternative: Cook turkey, onions and peppers and add this mixture and the remaining ingredients to your slow cooker. Cook on Low 6-8 hours or High 4-5 hours. Make sure pumkin is tender before serving.
