I adapted this
recipe from
Not Your Mama's Kitchen. She has an adorable blog and you should really check it out.
Its actually quite basic. Just saute the carrots in honey and add some sesame seeds at the end! Ingredients:
- 7-10 large carrots
- 1 tbs olive oil
- 2 tbs honey, to taste
- 1/2- 1 tbs sesame seeds
Wash and peal your carrots. Leaving some of the greens on top brings forth a beautiful color contrast. I saute my carrots in a cast iron pan. After the pan is hot (medium heat), add the olive oil. Once the olive oil is hot add the carrots and saute until the carrots start to become tender, about 5-7 minutes. Add the honey and with a wooden spoon move the carrots around in the pan until they have all been coated with honey. Continue sauteing for 3-5 minutes. At this time the carrots are tender, but slightly crisp. If you prefer your carrots to be softer, feel free to stick them in the oven at 425 degrees for 5-10 minutes.
Sprinkle some sesame seeds and salt onto your dish for the final presentation.
