Another day another food diary! Quite pleased I’ve managed to do these for the whole holiday so far! This morning I had eggs again, surprising I know, but I had them with avocado, hummus and some of my Mum’s home marinated olives. It was so so good. If you haven’t tried hummus and eggs together – stop what you’re doing and eat them now!
I had breakfast pretty late so it was more brunch. I had an ice lolly on the car journey to Tejeda – I love these Kontiki ones! We went to Tejeda to do a walk up to Roque Nublo which is a landmark here and has a nice hike up to it. I definitely burned off the Nutella Oreo brownie from the night before!
When we came home I was spurred on by the success of my courgette fritters to make something new. I definitely winged it but I ended up making some really tasty butternut squash and feta pancakes! I will tweak this recipe and post it when it’s right! I had it with the leftover walnut, beetroot and baby potato salad from the BBQ and they were amazing!
After dinner everyone had apple pie but I decided that although I wanted something sweet I wanted to have something a tad healthier. I made a variation of my healthy chocolate fudge bites which you can find here – I used a bit of dark chocolate instead of cocoa and just used dates, walnuts, honey and the chocolate. They were lovely!
