Potato & Corn Patties

Has this ever happened to you? You have a big dinner and you end up with leftover mashed potatoes and sides? I usually end up with leftover corn or peas or both combined. Here is a great way to make use of the leftovers and have a whole new side dish for dinner!

No measurements needed, it all depends on how much leftover mashed potatoes you have. You can add corn, peas or any other leftover veggie you have on hand. You can add cheese or pieces of leftover chicken if you want…anything goes really! If you want it spicy, you can add some hot sauce or chili flakes.

Ingredients

  • leftover cold mashed potato
  • leftover corn or other veggie you have on hand
  • 1 egg
  • 1/4 cup breadcrumbs (or panko)
  • salt and pepper
  • 3-5 tablespoons oil for frying

Instructions

  1. In a mixing bowl combine cold mashed potatoes with corn, add in egg and breadcrumbs, season with salt and pepper.
  2. Shape into patties. Heat oil in frying pan, wait till oil is hot. Fry four patties at a time, cook till golden on both sides.
  3. Serve right away. Enjoy!

Roasted Red Pepper and Chicken version:

  • leftover mashed potatoes
  • left over chicken
  • 1 roasted red pepper
  • 3 tbsp parmesan cheese
  • 1 egg
  • 1/4 cup bread crumbs (or panko)
  • salt and pepper

Depending on how much you have left over, is how much ingredients needed and how many patties you will get out of it. I used homemade roasted red peppers it just melts, and even changed the colour of the potatoes, if you using jarred just cup up in small chunks. Cut up the leftover cooked chicken and combine with the other ingredients. If its too soft add more bread crumbs. Shape into patties and fry with a little oil in a hot pan. Serve right away. Enjoy!
