I've had a week of fail recipes. They weren't food abominations but just a little meh, a little missable. I have been testing out new springtime recipes but so far my socks haven't been blown off. And I don't want to share a recipe with you guys that leaves you with your socks on. Socks on recipes are a no-go here. However, out of this week of failure I get to share my favourite rainy day recipe with you. Something that has been waiting for a while in my 'to blog' folder. A simple, fail safe go to that will make you the most loved person in the world ever, ever, ever.
MALTESER TIFFIN!
Yes, that's right. Crazy good tiffin. Every time I go out for coffee I look longingly through the glass at the tiffin (I also then buy said tiffin). It is one of the best things to go with a cup of tea or coffee. And who knew it was so absurdly - and I'm talking ABSURDLY - easy to make?! Not me. Now I'm going to share the secret with you all, I see tiffin addiction in our future, and potentially obesity. Sorry. Everything in moderation, yaddah yaddah. So yeah, this recipe is both wonderful and quite dangerously addictive. But who doesn't like the combination of maltesers, chocolate, biscuits and syrup? The answer to that question is no one. That's who.

For Malteser Tiffin you will need (makes about 25 pieces):
200g milk chocolate
100g unsalted butter
130g digestive biscuits
2 tbsp golden syrup
For the topping:
200g milk chocolate
25g unsalted butter
1 tsp golden syrup

Begin by lining a tin about 20cm square, or equivalent. Now put the butter, chocolate and syrup into a heatproof bowl and melt together on a gentle heat over a pan of barely simmering water.


Whilst you're waiting, grab your biscuits and weigh out 40g of the maltesers.


Put into a freezer bag, seal and bash it like mad with a rolling pin. This is satisfying.
You'll want mostly crumbs but a few chunks won't hurt anyone.


Crushed biscuity goodness. Set to one side.


When you're all melted together, take the chocolate mix off the heat.


Add in the rest of the maltesers and the crushed biscuit mix. Eat at least one of the maltesers as you're cooking or I will judge you.


Stir together and resist the urge to consume the whole bowl. Once thoroughly combined, press into your tin and set to one side.


Now for the topping. Melt together the sugar, butter and syrup.


Remove from the heat when you have something like this:

Spread over the base and then refrigerate for about 2 hours.


Once hardened, slice into bite size squares, stack high and become everyone's favourite person.
