I had some leftover steamed sprouts on hand and scrambled them up with fluffy eggs seasoned with salt, pepper, and garlic powder. Simple and delicious!
Ok so it’s not Thanksgiving, granted, but I made myself a huge Thanksgiving spread last week and the chickpea and I LIVED off these sandwiches for lunch every day. I also had lots of goodies to make turkey soup, broth, and all kids of freezer meals. I defrosted a little bit of my go-t0 crock-pot cranberry sauce for the occasion even. It was heavenly. I basically live for these leftover sandwiches each year. Luckily I always do one off season spread plus another two during holiday season. There are many of these in my future. SCORE!
A crazy errand-filled evening resulted in some pizza face-plantage. They have a drive-thru…enough said! I didn’t make it through the whole pie but I made a considerable dent!
Snackage consisted of a few squares off my new favorite dark chocolate quiona bar and a few bites of the chickpea’s cheese stick. She’s going through a phase where she REALLY likes sharing her food with me and pretty much insists I take bites of her yogurt, cheese, and crackers. As for her black beans, chicken, fruit, and veggies? She won’t readily share those. In fact she eats those so freakishly fast that they’re pretty much gone the second they hit the plate.
