Grab ‘n Go Freezer Egg McMuffin Sandwiches

Who here loves a “grab ‘n go breakfast?” Who here loves an Egg McMuffin?? Well good, cause today we are making one of my favorite easy breakfast recipes: Freezer Egg McMuffin Sandwiches!

These sandwiches are perfect for the husband on the go grabbing a quick bite on his way to work, or those kiddos rushing out the door on their way to school. I’m a person who always ‘forgets’ to eat, so this would be a perfect pick-me-up snack for the starving mother that needs a boost. Either way, here’s the best part, we’re combing three fun elements…

1. Grab ‘n go- cause who isn’t in a super big hurry these days?!
2. Healthy, cheap, and delicious as you want- this is a DIY recipe, so you can pick and choose your own ingredients!
3. Freezer meals! Which we can play with again later!

So throw on that deliciously cute apron after you hit the grocery store and get ready to prep 30 amazing Egg McMuffin breakfast sandwiches. That’s what’s for breakfast!

Ingredient list:

-30 English Muffins
I have the absolute thrill of living 1.5 miles away from a discount bread store. You gotta find one of these and get a spare freezer to fill. I get THE best bread for $1 a loaf.)
-30 fake cheese slices
Again, you can opt for healthy cheese blocks of any flavor and slice it yourself or even deli cheese if you prefer.
-30 eggs

FUN TIP: Did you know that you can freeze eggs? You can! Crack the egg into ice cube trays, mix the yolk and white together and once frozen, pop them into Ziplocs for easy storage! Voila!

-30 slices of ham OR bacon OR Canadian bacon OR sausage patties
I just bought a mega pack of cheap honey ham in the lunch meat department and a package of bacon, just to mix it up.
-Pam spray
-Muffin pan OR griddle
-Plastic Wrap
-Freezer Storage Bags

Assembly:
Prep ALL of the ingredients beforehand. This will feel like an assembly line process by the end because you are making 30 sandwiches.

Preheat your oven to 275 degrees F.

First you want to make your eggs. It is absolutely crucial that you SPRAY the heck out of the muffin pan or you might as well throw the pan away now. Those eggs will be oh so stuck to that pan unless you Pam it like crazy! So first things first… spray, spray, spray! Then… get crackin’!

FUN PARENTING MOMENT: If you have some extra time on your hands and might not eating a little extra crunch in your sandwich this would be really great egg crackin’ practice for your novice chef in the kitchen, they get 30 attempts to practice getting that egg to crack just right! My little 4 year old is always wanting to help me cook! She says she wants to be a ‘Chef Pirate Princess’ when she grows up!

After cracking the eggs in your muffin tin, take a fork and break the yoke. This will help evenly cook the eggs. This is also a great time to salt and pepper the eggs to your liking.

Drop your muffin pans into your pre-heated oven for about 10 minutes. Ovens are all very different, so a good rule of thumb is how they look- the whites should be white and not translucent but the yellows should be shloppy (<- real word) and still undercooked. (See picture below) This is good!! Remember, you are not eating these now! When these are ready to get devoured they will go back into a super hot microwave and cook again, finishing off the yolk to perfection!

Next, assembly line prep! While the eggs are cooking, I like to prep my sandwiches so that my very last step is throwing my egg right in between my ham and cheese… YUM. Look at that picture and see the pre-melt on that fake cheese. Ooh… I’m starting to hear my stomach growl right about… now!

Plastic wrapping anything is probably the most annoying part of freezer meals, but just delegate this job to one of your children or your husband, basically anyone who will be eating this and then you don’t have to worry about the maddening part.

(Psst, in order to make these look so very pretty for wrapping, turn the sandwich upside down for wrapping and then when you’re finished, the sandwich will be right side up! Kind of like wrapping Christmas presents!)

Wrap these suckers super tight and plop them in a Ziplock bag and throw ‘em in the freezer. These will last you a while if you plastic-wrapped them well. Because they are individually wrapped, each person can grab ‘n go to their little heart’s desire.

There you have it, one of my favorite easy breakfast recipes! A little prep work = a month of quick and easy breakfast!

When they are ready to eat, unwrap and heat in the microwave from their frozen state for 1 minute. My hubs says they “come back to life really well.” He eats them on his 30 minute commute to work every morning and it gives him a delicious and necessary jump start to his day.

Below is where I went off the beaten path a little bit and you can too:

I fried up some bacon for a batch of 12 because who can resist an entire package of bacon??

Answer: No one.

Just substitute your bacon for the ham, and now you have two great breakfast choices!

Enjoy making your egg sandwiches and be proud knowing that you just made a month’s worth of breakfast! That’s definitely something to be proud of!

Gotta run… there’s some bacon with my name on it.

Serves 30 Enjoy this quick and easy breakfast on-the-go. Make, freeze, eat, repeat!

Ingredients
  1. 30 English muffins
  2. 30 slices of cheese
  3. 30 eggs
  4. 30 slices of ham OR bacon OR Canadian bacon OR sausage patties
  5. Pam spray
  6. Muffin pan
  7. Plastic wrap
  8. Freezer storage bags

Instructions
  1. Preheat your oven to 275 degrees F.
  2. Use Pam to spray the muffin pan.
  3. Crack eggs into the muffin pan, use fork to break yolks, and salt and pepper to taste.
  4. Bake eggs for about 10 minutes, until whites are white and yolks are still a little runny.
  5. Layer cheese, meat, and egg on the English muffins.
  6. Wrap each muffin with plastic wrap.
  7. Package several in a freezer storage bag and freeze.
  8. When you're ready to eat, unwrap sandwich, microwave for about 1 minute, and enjoy!
