Nacho Chicken Ravioli

Are you still in a food coma from Thanksgiving?

I may have had an extra small plate of food that day. Eating comfort food like that doesn’t happen often, so I splurged a little more than normal. Let’s just say I wasn’t feeling the greatest after all that good stuff…but it was totally worth it.

The only downside to not having big dinners like this at our house is that we do not have any leftovers. Although I’m thinking my stomach and hips are probably happy about that food dilemma. We usually head an hour north to my in-laws for holidays. Now don’t get me wrong, they are more than willing to part with the leftovers, but for some reason we didn’t end up with any this year.

Now I’m kind of wishing we had some turkey leftovers to make this easy ravioli dinner again and some of this Apple Cranberry Turkey Salad.

My oldest absolutely loved this skillet dinner. He actually came into the office while I was editing these pictures and asked when we could have it again because he liked it so much. Woo hoo! Score another point for me in the dinner category! Yes, I might be patting myself on the back. Can you blame me? I mean when you are used to making sweets like this, or this, or even this, it’s huge to get the thumbs up from the kiddo on a dinner recipe.

Ever since this BLT Alfredo Skillet Ravioli happened, I have been wanting to create another new but super easy skillet dinner.

This dinner is so easy to put together. Any time a dinner can happen in under 30 minutes, and gets completely eaten means this one is going on the menu again and again.

Start by preparing the frozen ravioli according to the package directions. This is the longest part of the recipe. While you are waiting for those to cook, chop the chicken (or turkey) and dice the onions.

Then sauté the onions in a little bit of oil. Add the chicken, can of spicy tomatoes, and the Cheddar sauce and stir until warm. Toss the cooked ravioli into the sauce and season with pepper.

Just like that dinner is done! Easy peasy and cheesy delicious!

Nacho Chicken Ravioli

Prep Time: 25 minutes

Yield: 6 servings

Chicken and spicy tomatoes give a fiesta flavor to the cheddar sauce. The sauce has just enough heat to make you want to keep eating it.

Ingredients

1 package (25 ounce) frozen ravioli 1/2 cup diced red onion 1 Tablespoon olive oil 1 jar Ragu Double Cheddar sauce 1 can (10 ounce) diced tomatoes and chilies, drained 1 cup chopped cooked chicken pepper, to taste

Instructions

  1. Cook the ravioli according to the package directions.
  2. While the ravioli is cooking, chop the chicken and dice the onions.
  3. Saute the onions in the oil for 1-2 minutes. Add the chicken, tomatoes, and sauce and stir until warm.
  4. Gently stir in the cooked ravioli into the sauce. Season with pepper to taste and serve immediately. Serves 6.
