So... yeah. This recipe isn't clean at all. But it involves bacon. And it's organic bacon, at that. That's worth like... half a brownie point or something for trying, right?Judge me if you must. But sometimes, you just need some bacon. And some shallots. And cream cheese. All happy things, kids. All happy things. I also find odd pleasure in using the hand mixer for foods that aren't comprised of sugar and/or flour. Am I right? Plus, you can lick the attachments and not fear the dreaded raw egg weirdness.Of course, if you're like me... you'll see the hand mixer out on the counter and decide you need to make brownies. And cookies. And a cake. So do yourself a favor and make sure there's no sugar in your house when you make these potatoes.You know... just in case. Bacon Shallot Mashed PotatoesPrint this recipe!INGREDIENTS6 baby russet potatoes, unpeeled and cubed2 sliced center cut bacon, organic1 large shallot, chopped1 1/2 Tbsp whipped cream cheese1/4 tsp black pepper1/8 tsp salt DIRECTIONS1. Boil potatoes in large pot for 35-45 minutes, or until tender and skin peeling away from flesh.2. In the meantime, cook bacon in small skillet. Reserve grease and saute shallot slowly over medium-low heat.3. Drain potatoes; lightly beat with hand mixer. Add cream cheese and mix well. Add bacon and shallot; lightly whip until mixed.
