Monsters for Breakfast

When Nat and I were kids, our mom would make us homemade breakfast A LOT. Like almost every day. I took it for granted then, but now I know what an act of love and service that was. One of our very favorite breakfasts was “Monsters!” Well, that’s what my mom called them anyway, and so we grew up calling them Monsters too. (You may know them as German pancakes.) My mom’s recipe is the best! She passed it down to me, and now my kids love having these delicious pans of buttery goodness just as much as I did!

The sides and corners bubble up and make some really cool formations… thus the name, Monsters!
For Halloween, I thought it would be fun to add some candy eyes to make them even more like creatures:

What kid wouldn’t love getting this two-headed “monster” served to him for breakfast?? I stuck the candy eyes on with a dab of maple syrup. My favorite part about this recipe is how fast it is to throw together! I can easily make these before school. With just a few simple ingredients, and a blender, you can whip these up for your kids too!

Monsters (German Pancakes)

Ingredients

  • 1 stick of butter
  • 6 eggs
  • 1 C. milk
  • 1 C. flour
  • 1/2 tsp. salt

Instructions

  1. Preheat over to 400 degrees. Cut the stick of butter into 4 pieces and melt in 9x13 glass pan (in the oven while it is pre-heating.)
  2. Add the milk, eggs, flour and salt in your blender. Blend together until mixture is smooth. (Make sure there aren't any clumps of flour!)
  3. As soon as the butter is completely melted, remove the pan from the oven and when it reaches 400, pour the liquid mixture into buttery pan.
  4. Bake for 20 minutes.
  5. Cut into portions and serve with lots of syrup!
