Vegan Cinnamon Roll Centers in Halos Cups

This is becoming quite the thing for me.

You know, another post about my love for cinnamon rolls. In my world, the gooier equals the better. And since these here cinnamon roll centers are vegan, nothing necessarily has to be baked. So gooey.

You must realize that loving the center of cinnamon rolls makes life hard. If you love frosting, it’s oh-so-very easy to swipe a spoonful of frosting off the side of a cake without anyone noticing. If you love streusel toppings, you can easily take a spoonful of it from the top of whatever it is on and spread the rest of the streusel around the top so no one ever notices. But if you love the gooey centers of cinnamon rolls, there is no way to steal just the middle of 3 cinnamon rolls without people noticing. It’s hard being me.

I’ve always loved orange flavors paired with cinnamon rolls. I even made a giant version of these a while back, but we all know that mini foods are cuter. So Halos helps make this recipe cuter…and therefore more delicious. People eat with their eyes so cute food wins every time. I mean, the whole cupcake trend is because people think cupcakes are cuter than cake…right? That’s how I feel.

After this turkey meal followed by this turkey meal followed by some turkey sandwiches, I am over turkey. So yesterday I decided to put all our leftover turkey into a chili because chili powder trumps all other flavors. I used this recipe but left a ton of the ingredients out. I’m sure pasilla chiles are delicious but my pantry does not contain them. It still came out good. And now when I say to Andrew, “let’s go out to dinner.” And he answers in his voice of reason, “no, let’s just make turkey sandwiches.” I can say, “oh shucks, I put all the turkey in the chili that we’re eating for lunches this week. I guess we’ll have to go out.” I win. Jay kay. Kind of.

So I ended up making bread pudding for Thanksgiving dessert (this recipe…with ALL THE HEAVY CREAM). I’ve decided that bread pudding is way too heavy of a dessert to serve after a Thanksgiving meal. For dessert, people want something super sweet and delicious, not something super sweet, delicious and super heavy. Making a mental note for next year.

Oh just look at that swirly dough below. Don’t you just want to take a spoonful and eat it. I do. I really, really do.

So now that Thanksgiving has come and gone, we can get prepped for THE holiday. I ordered stockings (mine, Andrew’s (snowman in middle), Maggie (the moose one)). I had Andrew pick out his favorite (from 5 that I had pre-selected lol), but he didn’t properly participate in the activity because he just picked the least expensive one.

So this recipe is the perfect way to welcome Christmas into your home because it will make your house smell like Christmas. Orange spice baking in your oven beats pretty much every holiday candle you could buy. Except maybe those candles that really (really) do smell like a Christmas tree. Better yet, bake these while putting up your Christmas tree. Then you get all the holiday smells.

Ingredients
  1. 6 Halos
  2. 2/3 cup original almond milk
  3. 2 ½ cups oat flour (certified gluten-free, if needed)
  4. 2 tablespoon coconut oil, melted
  5. 1 ½ teaspoon baking powder
  6. 1 teaspoon vanilla
  7. ½ teaspoon salt
  8. 2 tablespoon brown sugar, packed
  9. 1 tablespoon cinnamon

Instructions
  1. Preheat oven to 350ºF. Slice Halos in half and use a spoon to scoop out the flesh.
  2. In a food processor, combine 2 halos and almond milk for 1 minute. Add in flour, coconut oil, baking powder, vanilla and salt. Process until a smooth batter forms. Scoop into a bowl. In a separate bowl, stir together brown sugar and cinnamon. Gently fold the cinnamon sugar mixture into the batter, gently enough so you can see the swirl in the batter. Fill the Halos cups up to the top with batter (the batter won’t rise much so don’t worry about them spilling over). Bake for 18-20 minutes.

Makes a dozen cinnamon roll centers

    1. Keep the flesh from the 4 leftover Halos in a bag in the fridge to eat throughout the week.
