Apple Cheddar Soup


Anyone who knows me or has read the blog for a while knows I have huge mixing issues. My food doesn't touch on the plate and some things are not meant to go together. But, cheese and apples have been one I have loved together since I was a kid. Once at our State Fair they had cheese covered apples on a stick, like caramel but with cheese, they were soo good. But they only had them for one year. I miss them. Then I saw this recipe on Pinterest and I had to give it a shot, just to see if it tastes as good in soup form as it did on a stick. I followed the Recipe pretty closely.
Ingredients 3 tablespoons butter 1 yellow onion, diced 1 large carrot, sliced into thin rounds salt and fresh ground pepper to taste ½ cup all-purpose flour 2 teaspoons chili powder 4 cups vegetable broth 1 large tart apple, diced 1 cup apple juice 2 cups shredded cheddar cheese salt and fresh ground pepper 1 tart apple, diced, for garnish (optional)
Instructions Melt butter in a large saucepan or soup pot. Add onion and carrot; cook over medium-low heat for 7 to 8 minutes, or until vegetables are tender. Stir in flour and chili powder. Slowly add broth and continue to stir until everything is well combined. Add apple to soup and cover. Reduce heat to a simmer and continue to cook for about 10 minutes, or until soup is thick and apples are tender. Stir occasionally.
(I transferred to blender to puree at this point, not sure why I did it this way) Transfer back to soup pot and slowly stir in apple juice and shredded cheddar cheese. Continue to cook and stir until cheese is completely melted. Remove from heat.Let cool for 2 minutes. Original recipe says to Transfer to a blender and blend until smooth, at this point instead of earlier. Taste for salt and pepper. Ladle soup into bowls and garnish with diced apple.
The soup tasted great. It was really different then our normal style of soups. But it still had the warmth you expect and want from a soup but the apple gave it a brightness. Next time I think I would skip the carrots, there were times that I could taste the carrot more then the cheese and apple. ~ Cassi
