The Best Anytime Pancakes Recipe


"Best Anytime Pancakes" Super quick, super easy, super yummy. Ingredients 2 c. all-purpose flour (we use white whole wheat flour) 1 tbsp. sugar 1/2 tsp. baking soda 1/4 tsp. salt 1/8 tsp. baking powder 2 eggs 2 cups buttermilk (see notes below) 1 tbsp. vegetable oil
Optional Add-Ins (pick n' choose) 1/4 tsp. cinnamon 1/4 tsp. allspice 1/2 mashed banana 1 cup fresh berries
Topping Ideas (pick n' choose) Butter Maple Syrup Powdered Sugar Peanut Butter Whipped Cream Honey Fruit
Mix the dry ingredients- flour, sugar, baking soda, salt, and baking powder in a large bowl- if you choose to add cinnamon and allspice, add it with these ingredients. In a small bowl, beat the eggs, buttermilk, and oil. Stir into dry ingredients until just moistened. Mix in the banana or berries if you would like, too! Pour batter onto a greased skillet or pan by 1/4 cupfuls (or however you big you like your pancakes). Flip pancakes when bubbles form on top and cook until second side is golden brown. Don't worry if your first ones are the worst...you should just eat those while you cook the rest and no one will know ;). Serve with the toppings of your choice!
A special note: Most of these ingredients you will have on hand except the buttermilk. This one always gets me because it is not something I purchase unless I foresee a need. On the other hand, pancakes are usually a meal that I make when I am scrambling for time- so no chance for a trip to the store. Luckily, there is a substitution for this ingredient. Simply add 1 tbsp. of white vinegar plus enough milk to equal one cup and let it stand for five minutes. Then add this to batter as you would the buttermilk. It is such a lifesaver in a buttermilk pinch! Happy pancake making!
