just the name Persian love cake made me want to try a slice of the cake, the combination of flavours sounded so interesting, rose, lemon, pistachio, saffron and cardamon. i loved it, so i decided to use those flavours and turn it into a cake doughnut.
recipe 110g self raising flour 3/4 cup plus 3 tbsp
110g butter 8 tbsp 110g sugar 1/2 cup plus 1 tbsp 2 eggs zest of half a lemon 1 tsp rose water 4 cardamom pods crushed and the seeds removed few strands of saffron 30g pistachio nuts pinch of salt
preheat the oven to 350f 180c put the nuts in a food processor reserving a few to decorate the doughnuts, process until a powder like consistency, in a bowl add the butter and sugar and whisk until soft and light, then add the eggs one at a time, add the lemon zest rosewater and crushed cardamom seeds and saffron and combine, then sift in the flour and add the pistachios and fold in. spoon the cake batter into a piping bag and pipe into greased doughnut mould
bake for 11 to 15 minutes tip out and let cool mix glaze 100g icing sugar few drops of lemon juice mix the icing and spread it on add rose petals and pistachios to decorate
