Coconut Cookies

As today is an important day to me, I figured it was time to celebrate. The thing is though I’m a bit “caked out” at the moment for reasons that will become apparent in the future. I’ve made some coconut cookies instead, as a favour to myself.

Why is today important?

Well last year I didn’t really mark the occasion but this year it feels right to celebrate Wholesome Ireland’s 2nd Birthday.

I know I don’t look a day over 30. *cough*

I won’t bore you with all the things that have happened in the past 2 years. I will tell you that writing this blog has changed and enriched my life beyond measure.

It feels like only yesterday when I wrote my first blogpost on a simple way to make breakfast for the one you love. Yet it seems like this blog is an extension of who I am, and therefore it feels like I’ve been writing here for as long as I can remember.

I’ve a large pint mug of tea in my hand and a lovely coconut cookie to dunk in it. It doesn’t get much better than that in my books!

Coconut Cookies

Ingredients

  • 100g butter, softened
  • 100g caster sugar
  • 1 medium egg
  • 100g plain flour
  • 100g dessicated coconut

Method

Preheat your (fan) oven to 180 degrees Celsius and line a baking tray with non stick greaseproof paper.

Lash all the ingredients into a large bowl and beat well until you have a dough. Using a tablespoon as a size measure, spoon out the cookie dough and space well on the baking tray. You won’t be able to spoon all the dough out in one go so wrap the remainder in cling film and pop it in the fridge. The uncooked dough will keep for up to a week.

Bake the cookies in the oven for 15 minutes or until golden brown. Allow to cool on the tray before serving with tea (what else?).
