After a nail-biting final day of the Six Nations Rugby yesterday, with me backing England, Ireland beat France in Paris, and the Six Nation’s Trophy was snatched from our hands with that Ireland win! Disappointed though I was at the result – after all, England had scored a magnificent 52 points against the Italians in Rome, and had also beaten Ireland the previous weekend, Ireland were worthy winners and what a fabulous way for Brian O’Driscoll to end his International career as well as being a great gift for St Patrick’s Day. As I explained in a previous post, Dublin Coddle and Spuds! BBQ style Irish Slow Cooked Cheese and Bacon Potatoes in Paper, we don’t normally celebrate St Patrick’s Day, although I have attended some fabulous St Paddy’s Day festivities in the past, but it’s ALWAYS nice to celebrate all that Ireland has to offer on the culinary front, with Guinness and Irish Cream coming in at number one and number two in our household!

So, when I was commissioned to create a couple of Irish inspired desserts for St Patrick’s Day recently, I turned my attention to two of Ireland’s most famous exports, and combined them with another very popular ingredient, CHOCOLATE! Both recipes are easy to make and yet make a spectacular and impressive way to end an Irish themed meal for those who will be celebrating St Patrick’s Day on the 17th March.

Irish Whisky and Irish Cream Chocolate Mousse

The Chocolate Guinness cake is made with 100% pure cocoa and Guinness of course, and has a liberal amount of chocolate and Guinness butter-cream to sandwich the two large cakes together, before the frosting is added and an indulgent finish of chocolate flakes are added. It’s an impressively large and indulgent cake and the addition of the Guinness adds a sweet, malty and almost hoppy flavour, which marries extremely well with the cocoa.

The little chocolate mousse recipe by contrast, has oodles of chocolate in it, as well as free-range eggs, a splash of Irish Cream liqueur and a dreamy Irish whiskey Chantilly cream topping! The recipe is based on my favourite chocolate mousse recipe by the late, great Elizabeth David, with the necessary Irish boozy additions, and I always serve my chocolate mousse in water or shorts glasses, as you can see the layers with the cream and they are easier to serve this way too.
