Vegan Taco Salad

You are not going to find me complaining about the heat. Making jokes about my office being a 2-for-1 sauna and office? You bet. It just means I can save the money and not splurge on the sauna desk I have been eyeballing. (But seriously, though I kinda want that thing…) I think I am built for the hot weather. I can tolerate temperatures that make other people melt quicker then that guy in Indiana Jones. But, since even I have limits, I do want cooler food and drinks in this 92 degree weather. And whipping up a quick, light dinner just feels right at this time of the year. I made this vegan taco salad for the first time a couple of nights ago. And we have had it a few nights in a row now. Partly that is due to the fact that I had 9 heads of romaine lettuce in my fridge at the start of the week. But mostly because once I made it, I have been wanting to have it again and again. Hubby has been requesting it be repeated as well, and after I fed him a “kale salad” a few weeks ago that (…)
