Clean Eating | Broiled Grapefruit with Yogurt + Cinnamon

I don’t mind the cold and snow during the beginning of winter, but around this time of year I start to get antsy. My love for cuddling up with comfort food in front of the fireplace gives way to a desire to eat on a restaurant patio, run along the riverfront path or head over to the neighbor’s for drinks and laughs around their fire pit.

Occasionally, the sun peeks through the heavy clouds and I’m tempted to venture out, but as soon as I open my door, I’m quickly reminded by numb toes that temperatures are still hovering in the single digits. And so I’m quarantined, awaiting a sign of warmer days.

There’s something especially beautiful about bright citrus juxtaposed against the colorless winter. Gray skies still loom over a blanket of white snow and frigid days quickly turn to long nights. Yet in this dreary season, pops of pink, yellow and orange bring cheer to my kitchen.

Broiled Grapefruit with Yogurt and Cinnamon bridges this seasonal gap. Warm grapefruit topped with caramelized sugar, creamy yogurt and a touch of cinnamon makes it feel like a winter comfort food, while vivid colors and tart, juicy flavors provide a promise that spring is just around the corner.

Broiled Grapefruit with Yogurt Cinnamon
Recipe slightly adapted from MarthaStewart.com
Yields 2 servings (120 calories per serving)

1 grapefruit, halved
2 teaspoons sugar or honey (I used turbinado sugar)
1/3 cup nonfat Greek yogurt
Ground cinnamon to taste (I love using a cinnamon grinder that yields larger flakes of cinnamon, but regular ground cinnamon works great, too.)

1. Preheat your broiler and set an oven rack close to the oven heat source (about 4-6 inches away).

2. Use a knife to slice between the peel of the grapefruit and the fruit. You want to loosen all the good fruit from the peel and pith so you can easily scoop it out after it’s done in the broiler. Be careful not to slice through the bottom of the peel since you don’t want to lose the grapefruit juice.

3. Place grapefruit halves face up on a baking sheet or oven safe dish*. Sprinkle a teaspoon of sugar on each half.

4. Broil for about 5-6 minutes, or until the sugar and grapefruit get slightly browned.

5. Remove from the oven and transfer to individual dishes.

6. Top each half with a spoonful of Greek yogurt. Sprinkle on the cinnamon. Serve and enjoy!

*Quick Tip: Spilled sugar will caramelize on the baking sheet. Line the baking sheet with parchment paper for easy cleanup.
