In The Kitchen: SKINNY TUNA SALAD "SANDWICH"



During the summer months I try and watch my carbs. And by carbs I mean "bad" carbs like white refined processed things such as white rice, white bread, white pasta and potatoes. Not "good" carbs like veggies, fruits, whole grains ect.

I really love a good scone or croissant (butter, almond, pain au chocolate - you name it I love it lol!). So I try and save my "bad" carbs for things like that because if I'm going to eat "bad carbs" then I want to REALLY indulge in them hehehe!

So if I'm home I try and eat as "bad" carb free as possible.
Ingredients:

1 12 oz. Can Tuna Light in Water
1/4 Cup Low Fat Mayo
1/4 Cup Banana Peppers
1 Tbsp. Sweet Relish
1 Tbsp. Stone Ground Mustard
1/2 Cup Garbanzo Beans
1 Tsp. Lemon Juice
1 Stalk of Celery
1/4 Cup Leeks
1/2 a Red Onion
Lettuce Leaves


Begin by prepping all of your items.
Drain your Tuna and put it in a bowl.
I like to add a dash of banana pepper water.

Wash all of your vegetables and dice your Celery, Leeks, Red Onion & Banana Peppers.


Add your Sweet Relish to your tuna

Add your Stone Ground Mustard to your tuna

Add your Mayo to your tuna


Forgot to include a pic of the Garbanzo beans in the ingredients pic above.
I love Garbanzo beans they're great protein & super high in fiber and they're absolutely delicious w/ Tuna salad!
Drain the water from the Garbanzo beans.

So pretty right??!
hehehe!

Add all of ingredients to your Tuna and stir together until it's well combined.


And top your tuna salad on to your Lettuce leaves!

And this is just as easy to turn into a carb meal obviously. I just add the tuna salad between two slices of bread and serve it to The Hubs. 2 birds 1 stone!!
