Sassy Salad: Fruity Bleu


We eat a lot of salad in my house, I mean a lot. I dare say we have a salad each night and because of that I am always trying to make them sassy since they are often the main event. This fruity bleu is one of my favorites, especially in the summer when there is so much delicious fruit to choose from.

Ingredients:
  • Greens of your choice (spinach, romaine, spring mix)
  • Carrots (and/or any other veggies you want to throw in there)
  • Fruit of your choosing (I went with strawberries, kiwi and blueberries)
  • 1/2 cup of bleu cheese crumbles
Dressing:
  • 2 tablespoons bleu cheese dressing
  • 2 tablespoons balsamic vinaigrette


Once you have picked what you want to include, cut, rinse, drain and set aside.


Next up, in a small bowl, mix the bleu cheese (I prefer Bob's Big Boy) and vinaigrette.


With the fruit/veggies ready to go, the dressing mixed and the cheese waiting to be sprinkled, it's go time.


Start by tossing the greens in the dressing (I like each leaf to be lightly coated).


Once the greens are nice and dressed, add your fruit and veggies, give it another good toss.


Once all the greens and fruits are mixed to perfection, take a hefty scoop and set on your plate. Then sprinkle bleu cheese crumbles on top so that each bite has one sassy little kick to it.


The flavors that come into play here are really going to blow you away. The way the sweet fruit blends with the strong bleu will set your mouth into sensory overload. Love peaches? Throw some in! Prefer a bite of apple in there too? Go for it! This fruity bleu can be done in so many ways it only makes it that much more delish!
