Frozen Margaritas for Man Food Mondays

Just in time for Labor day, Frozen Margaritas for Man Food Mondays!

This is a recipe that Mom handed down to me 10 or more years ago and let me tell you it is really REALLY good. Short Mom story here…Mom was a very quiet person, very serious, and not prone to be outlandish, so when she told me of the time she first had a margarita, I laughed out loud. Her description was something like, ” It tasted like limeade, almost like candy, I drank 3 before I knew it. Then I got up to walk to the door and my legs would not work!” This began her quest to find the perfect margarita formula, and let me tell you it is a good one.

I recently had a discussion at a trade show I was working at about which is more popular a frozen margarita or one on the rocks. We decided that frozen was an old school way to drink it not as popular with a younger consumer. While this recipe is called frozen you can make it and serve it over ice and it does quite well. If you are going to freeze it, however this is best done the night before you plan to serve it, so that it has time to get to the slushie stage. It will not freeze solid the tequila ingredients that need a very low temp to go solid, -34.4° F, which your home freezer will not reach. This recipe is made from all fresh ingredients and while you can substitute frozen fruit concentrates and liquids, I don’t recommend that as it does effect the flavor of your drink significantly. Having recommended this, know that this is a labor intensive drink, but the end result is worth the effort.

The tools for the construction are simple: a wire whisk, a hand juicer and a couple of mixing bowls. Of course you’ll need a freezer proof pitcher and glasses to drink it from :). I have a few different hand juicers like this one and this one. I also have a press type juicer that is older than me, but I don’t like it as much. This is the newer version of the pitcher, Yes mine is a Vollrath and at over 60 years old is a family heirloom.

So, lets get started.

Ingredients
  • 8 medium to large navel oranges= 2 cups juice
  • 16 medium limes= 2 cups juice
  • 2 cups simple syrup, recipe to follow
  • 2 cups tequila
  • 1 cup Citronge or Grand Mariner

Instructions
  1. You will need to make a simple syrup of 4 cups granulated white sugar and 2 cups of water. Bring your water to a boil and pour over the sugar and stir till dissolved. Allow to fully cool before mixing. I usually put this in the freezer for 30 to 40 minutes, and then set it on the counter to assume room temp.
  2. While the syrup is cooling, juice the oranges and the limes. You're are looking to have 2 cup of juice from each. I like a little pulp in mine so I use the squeeze press then the reamer, be sure to remove the seeds from the juice as you go.
  3. Add the tequila and the Citronge.
  4. Whisk this all together and set in the freezer over night. If you are an over the rocks type then serve over ice.

These are sweet tasting drinks, so I like to serve with salt on the glass rims and a wedge of lime. I use Citronge instead of Triple Sec or Cointreau, because the taste is a bit milder. I recommend using higher quality liqueurs, since it improves the taste .

So, there you have it. I have a pet name for this drink the initials are KYA margaritas and I have rules for serving them:

1. All that enter the house and would be served this must surrender their car/truck keys.

2. All that leave must convince me that they can drive if they have drank more than one.

This is a powerful hot weather drink, so please be careful and enjoy it responsibly.

Until next week, take care of your self.

Steve
