Potato Bacon Bites for Man Food Mondays

Happy Monday folks. I have a very tasty appetizer for you this morning, Potato Bacon Bites for Man Food Mondays. I have wanted to do this for a few months now, I can tell you that this is one tasty dish for watching the weekends football games. I mean what could be better than little slices of baked potato wrapped in bacon and coated in a warm creamy cheese dip?

This is a fairly quick and easy dish, it takes about an hour to do start to finish and there is very little mess involved. I used the smaller sized round/fingerling potatoes about 1 inch in diameter. You can use larger baking potatoes just cut them into 1 1/2 inch chunks so they cook evenly. The ones I used were a mix of white, red and purple potatoes, I wanted to be festive :). Your going to need a cookie sheet covered with either parchment paper or aluminum foil and a few wooden tooth picks to hold the bacon on the potatoes.

Ingredients Potato Bites
  • 1½ lb fingerling potatoes
  • 1 pound center cut thick sliced bacon
  • 1 teaspoon salt
cheese dip
  • 1 cup Cheddar cheese
  • ⅓ cup creamed cheese
  • ⅓ cup sour cream
  • 2 tablespoons salted butter

Instructions Potato Bites
  1. Rinse potatoes, if using small rounds slice in half, if using whole baking potatoes cut into 1½ inch chunks, if using fingerling potatoes cut to 1½ long. The goal is to have uniform sized pieces to work with.
  2. Place in a pot and cover with water, add 1 teaspoon salt bring water to a boil and cook for 15 minutes.
  3. Preheat oven to 400°
  4. Remove from stove and drain
  5. Cover a cookie sheet with parchment paper or aluminum foil.
  6. Cut the bacon slices in half.
  7. Wrap 1 potato piece in bacon and secure with toothpick. Place on cookie sheet, allowing 1 inch between each potato bite. Repeat till all potatoes are wrapped.
  8. Place on center rack of the oven and cook for 25 to 30 minutes, turning half way through.
Cheese Dip
  1. in a small sauce pan combine all the ingredients and heat till creamy. Stir constantly to keep from burning.
  2. Remove from heat and pour into serving bowl.

Depending on how many folks are going to enjoy these you can expand the recipe, If you have a large batch to make you may need to cook in 2 or more sessions. To be honest I would not double the cheese dip since we had about half left over when we were done.

These are best served warm. Just remember to turn them at the 15 minute mark and remove them from the oven when they are done, so they do not burn.
