Warm Blue Cheese Dip

So, I have actually made it through the 9th day of NaBloPoMo. I have to admit that yesterday’s post wasn’t much, but I needed to say it. I mean I am making changes, and you needed to know what to expect. My daughter is home for college for my son’s senior night in marching band, and we had really bad car trouble as in we now have a new-to-us car, so between car shopping and kid time, I am surprised that I have made it this far. This Warm Blue Cheese Dip though, this is a real post. This is really an incredible dip. It would be good on most breads, crackers, or fruit. We ate it on toasted whole wheat baguette slices and apples. So yum! You really have to try it. My husband, son, and I ate almost all of it for lunch. I am trying not to even think about the calories there. None of us had eaten much all day, and there was this yummy deliciousness just waiting to be eaten. When you are a blogger, sometimes food shows up at odd times of the day and in odd combinations. So, party dip for lunch on Saturday afternoon is perfectly normal. Speaking of parties, this would be perfect to take to a holiday party!

And, it is super easy to make in the Crock-Pot. I used a really small one that we have. I think it is old enough that it was before the little dipper pots they have now and is probably a little bigger though the dip didn’t fill it up. You can also make this in a pot on top of the stove. Just make sure you keep the temperature as low as possible and stir it frequently, so that it doesn’t burn. My little pot only has on and off (no low or warm settings), so if this is going to be sitting out at a party for a while, I check it occasionally to make sure it isn’t burning and to give it a little stir, so if you only have one setting you might try to do that too. Of course, it might not last long enough to need to check it because it really is delicious.

Ingredients Dip
  • ½ cup (1 stick) butter
  • 2 8 ounce packages cream cheese
  • ¼ cup heavy cream
  • 1 4.4 ounce package blue cheese
  • 2 cloves garlic, minced
  • ½ cup chopped walnuts, toasted (I toast mine by placing them in a dry skillet over medium heat and stirring them constantly just until they begin to brown.)
To Serve:
  • bread, crackers, and/or fruit for dipping

Instructions
  1. Place all dip ingredients in Crock-Pot except walnuts.
  2. Cook, stirring occasionally, until all are melted and combined, about 45 minutes.
  3. Stir in walnuts.
  4. Serve with bread, crackers and/or fruit for dipping.
