Healthy and Free: Red, White, & Blue Vegan Smoothie: Show Me Your Smoothietude!


Kathy at Healthy. Happy. Life., who is currently working on her new cookbook, 365 Vegan Smoothies, is hosting a "Show Me Your Smoothietude" contest. The winner gets a free Vitamix blender, and seeing that I made these smoothies with my food processor, I could definitely use a Vitamix at this point.

I came across the contest one day while procrastinating during Bar prep, and it ended up becoming a good excuse to get a little creative.

So...what did I come up with?! Because the Fourth of July is almost here (and because it's my favorite holiday), I figured a red, white, and blue smoothie would be the perfect fit. It's actually 3 smoothies in one: strawberry, blueberry, and coconut banana. But don't fret! This recipe only involves a few ingredients and is really easy to make! It's also loaded with tons of nutrients and antioxidants, which is a nice bonus. Add a little rum to it on the Fourth, and you've got yourself a party.

What a great way to celebrate freedom.


Strawberry Smoothie:

Ingredients: 2 cups strawberries (Or just use 2 cups frozen strawberries and no ice) 1 1/2 cups ice (more or less) 1/2 cup water
Instructions: Add all of the ingredients to your blender and blend until smooth.

Blueberry Smoothie:

Ingredients: 2 cups frozen blueberries 1/2 cup water (maybe more)
Instructions: Add all of the ingredients to your blender and blend until smooth.

Coconut Banana Smoothie:

Ingredients: 1 (13oz.) can coconut milk 1 banana 1 1/2 to 2 cups ice
Instructions: Add all of the ingredients to your blender and blend until smooth.
Makes about 6 smoothies.
You can place each individual smoothie mixture in the freezer while making the other smoothies. Once all of the smoothies are done, take the others out of the freezer, and layer them over each other.

The result: a bright and delicious, layered, red, white, and blue smoothie. Enjoy! :)
