My Creamy Vegetarian Enchiladas are perfect for vegetarians, and non-vegetarians, who love Mexican food recipes and are looking for easy meals they can prepare for their family.

This vegetarian enchiladas recipe came about after I heard Kraft had a new product to help people like myself who are short on time and in need of easy dinner ideas.

Some people turn their noses up at meal helpers, but when you’re tired a meal helper can be a life saver.

Trust me.

I don’t always feel like worrying and fussing over the stove, and some nights I just want to make a quick dinner and keep it pushing to my couch and DVR.

The night I picked up Kraft Recipe Makers was one of those nights.

At first I planned on making Asian inspired fish tacos, but wouldn’t you know my local Super Wal-Mart had neerin a Fish Tacos Recipe Maker box in sight. My choices were Pot Roast or Verde Chicken Enchilada.

I was a bit bummed, I admit, because I had my mouth set on fish tacos.

But ever the clever and resourceful cook I am, and being an enchilada recipe lover, I picked up the Kraft Recipe Makers Verde Chicken Enchilada box and kept it moving.

I’m always on Pinterest looking for quick dinner ideas, easy vegetarian recipes, and vegetarian dishes for my mainly vegetarian lifestyle, so I had a spinach and black bean vegetarian enchiladas recipe in the back of my mind.

I knew I had kale, corn, and cheese at home so I decided to substitute my kale for spinach, and my corn for black beans, and make easy vegetarian enchiladas.

This vegetarian enchiladas recipe is what I came up with.

I hope you enjoy, because my husband and I definitely love it!

Creamy Vegetarian Enchiladas

Gather your ingredients.

Chop up your vegetables.

Saute vegetables in oil and seasoning.

Add lime juice to scallions and set aside to acidify.

Add corn and cheese to sauteed kale.

Pour in Creamy Ranchero Filling Sauce to vegetables and stir.

Pour Tomatillo Finishing Sauce into the bottom of a baking dish.

Spoon mixture down the center of tortillas, roll, and place tortillas seam side down into dish.

Cover tortillas with cheese, Tomatillo Finishing Sauce, and scallions.

Bake enchiladas at 350 for 30 mins.

Ingredients
1 box of Kraft Verde Chicken Enchilada Recipe Makers 8 small corn tortillas 1 cup of canned corn kernels, drained 2 cups fresh kale, chopped 1/4 cup chopped onions. 1/2 cup of thinly sliced scallions 1/2 lime 1 cup of cheese 1 teaspoon of extra virgin olive oil 1/4 teaspoon of Adobo Seasoning 1/4 teaspoon paprika 1/4 teaspoon of pepper 1/4 teaspoon garlic powder 1 pinch of Mrs. Dash Seasoning w/o lemon 1pinch of crushed red peppers
Instructions
1.) Preheat oven to 350 degrees F. 2.) Lightly oil a baking dish and set aside. 3.) Wash and chop scallions, onions, and kale. 4.) Pour 1 teaspoon of oil into a non-stick skillet. 5.) Saute kale and onions on low heat with seasonings until barely firm. 6.) Add lime juice from lime to scallions and set aside. 7.) Add corn, 1/2 cup of cheese, and Creamy Ranchero Filling Sauce to kale and oinons, and mix well. 8.) Wrap stacked tortillas between damp paper towels and microwave for 1 minute. 9.) Pour 1 pack of Tomatillo Finishing Sauce into the bottom of the baking dish. 10.) Spoon mixture down the center of tortillas, roll, and place tortillas seam side down into dish. 11.) Top tortillas with remaining cheese and the last pack of Tomatillo Finishing Sacuce. 12.) Cover enchiladas with scallions. 13.) Bake enchiladas for 20-30 degrees.
