Apple Pie Pops With Apple Cider Glaze

Pumpkin may be the reigning star of the autumn baking scene, but there’s another equally delicious fruit in season right now – Apples! Sure, they aren’t as versatile as pumpkin (you’re never going to see an “apple spiced latte” at Starbucks), but they are the perfect ingredient for cakes, muffins, and now pie pops! Treat your family or party guests to these Apple Pie Pops With Apple Cider Glaze!

The apple orchards are packed with sweet and juicy apples this time of year. Our family loves all kinds of apples, but the Honeycrisp is our favorite! They are mildly sweet with just a hint of tartness, and have a firm texture that holds up well in apple pie filling. My 2-year-old even managed to sneak one while I was baking, little rascal!
These bite-sized Apple Pie Pops are perfect for any fall festivity. They’re small enough for kiddos to have a sweet treat without going into sugar overdrive. Another bonus is that they’re portable, making them ideal for bake sales, parties, and play dates. (Plus, aren’t they adorable all dolled up with that little red bow?)
The idea for these Apple Pie Pops came to me last summer when I made a delicious coconut oil pie crust. I knew that with the addition of a few fall inspired spices, this crust would make the perfect apple pie. The tricky part was patiently waiting for apple season to arrive. Thank goodness it did, and not a moment too soon!

Ingredients
  1. Makes about 10 pie pops

For the Pie Crust
2 batches of coconut oil pie crust with the following additions
  1. 1 TBS ground cinnamon
  2. 1 TBS coconut sugar (in addition to the amount already called for)
  3. 1 tsp freshly grated nutmeg
  4. 1/4 tsp allspice
  5. 1/4 ginger
  6. Pinch of cloves
  7. 2 TBS organic maple syrup

For the Apple Pie Filling
  1. 3 organic Honeycrisp apples (or a variety of your choice), peeled and diced
  2. Squeeze of fresh lemon juice
  3. 3 TBS coconut sugar
  4. 1 TBS cinnamon
  5. 1/4 tsp ginger
  6. 1/4 tsp nutmeg
  7. 1 TBS all purpose gluten free flour
  8. Pinch of salt
  9. 1 TBS apple cider

For the Apple Cider Glaze (optional)
  1. 3-4 TBS powdered sugar
  2. 1 TBS apple cider

For the Pie Crust
  1. Follow the original pie crust instructions as written, except add the additional spices to your dry ingredients and add the maple syrup with the coconut oil.

DIRECTIONS
  1. 1. Place the diced apples in a medium bowl and squeeze the lemon juice over them. Gently stir.
  2. 2. In another bowl, sift together the coconut sugar, cinnamon, ginger, nutmeg, flour, and salt.
  3. 3. Add the dry ingredients to the apples and gently toss to evenly coat. Then, add the apple cider and stir.

For Apple Cider Glaze

    DIRECTIONS
    1. 1. Mix powdered sugar and apple cider in a small bowl. Set aside until Apple Pie Pops have cooled.

    To assemble the Apple Pie Pops
    1. 1. Preheat your oven to 400*.
    2. 2. Roll out the pie dough until it is no more than 1/2" thick. Use a circular cookie cutter (or a round jar lid) to cut out circles for the pie pops.
    3. 3. Place the pie crust circles onto a parchment lined baking sheet. Gently press a lollipop stick into the dough, placing it slightly more than halfway onto the circle. Spoon on a dollop of the apple pie filling onto each circular dough.
    4. 4. Place a second round piece of dough on top of the apple filling. Use a fork to gently press and seal the edges.
    5. 5. Bake at 400* for 12-15 minutes (depending on your oven).
    6. 6. Once they are finished baking, place the pie pops onto a cooling rack and drizzle with apple cider glaze when they cool to room temperature.
