Yes, here I am with another Quinoa recipe and yes I am borderline addicted! Quinoa just goes with everything and it is a true superfood. I suppose I am on a mission to prove its yumminess. Got my hubby to eat this one too, so yes…miracles do happen
1/2 Cup dry Quinoa
1 1/2 Cup Vegetable Broth
1 Small Lime
1/2 Cup Black Beans
1/4 Cup Chopped Fresh Cilantro
In a covered pan, simmer the Quinoa in Vegetable Broth until tender. (About 20-30 minutes) Remove from burner and add Black Beans. Juice the lime into the Quinoa. Add chopped Cilantro. Stir well and serve on a bed of spinach or a cabbage leaf if desired. Serves 2 as a meal or 4 as a side dish.
