Green Goddess Dressing

It's hard not to undervalue salad dressing, am I right? If I even think to put it on my shopping list, I inevitably end up looking at the options and thinking, "I don't know. Do I even need to spend that much money on salad dressing?"

I'm really cheap. But that's beside the point. Salad dressing's home in the grocery aisles is usually next to neighbors like mayo or vinegar. It's not exactly prime real estate. I mean, you never see salad dressing in the same isle as chips or cookies. And yet, I can't help but feel the need to point out that salad dressing is often the savior of vegetables.

Seriously though, it totally is. Salads, in my humble opinion, kind of suck without dressing. (Feel free to disagree. I've known a few folks who really loved dry salad. And I'm not going to tell you how to live your life.) I don't know about you, but a good dressing can really make or break a salad to me. And I'm happy to report this particular dressing can indeed make one. :)
Green Goddess Dressing, makes about 2 cups. (Lots of great recipes for this out there, mine is adapted from here.)

1/2 cup mayo
1/3 cup buttermilk
1 lime (juice only)
1/4 cup chives
1/4 cup parsley
2 garlic cloves
salt pepper

Add all ingredients to a food processor and blend until smooth. Pour into a jar or sealable container and refrigerate until ready to serve. You can store this in the refrigerator for up to two weeks.
