I went through this book from front to back and dog-eared many pages. I ended up going with a recipe that I just knew my family would love.

Underneath that beautiful bird is potatoes, leeks and carrots. Boy, was it ever juicy and delicious! I make a lot of chicken around here, especially roasted in the oven, and this is now my favorite way to do it. It is easy to do, takes one pot to cook it all in, and tastes amazing! Now I can't wait to get to some more of these pages, and see how great other dishes are. I love this book like I love my meat! Plentiful!
