Homemade Organic Potato Chips

These are very tasty! They are easy to make and depending on whether you use a microwave or bake them, they don’t take too long to make.

Serving Size: 2

Ingredients:

  • 2 lbs. organic baking potatoes
  • vegetable oil cooking spray
  • coarse salt
  • herbs and spices of choice

Directions:

  1. If baking, preheat the oven to 400 F / 204 C.
  2. Wash the potatoes and pat dry.
  3. Slice very very thinly using a mandolin or food processor.
  4. Place the sliced potatoes in a large bowl of cold water to wash off the extra starch to make them crispier.
  5. Remove from the water bath and lay individually on paper towels.
  6. Blot the potato slices dry.
  7. Prepare cookie sheets with baking parchment.
  8. Lay the potato slices separately on the baking parchment.
  9. Spray with a thin layer of cooking oil and sprinkle with salt.
  10. Optionally sprinkle with any herbs you enjoy.
  11. If using the microwave, place in the microwave on high and cook for 5 minutes.
  12. Allow to “rest” for 1 minute, then microwave again for 3:30-4:00 minutes longer.
  13. Remove from the oven when golden brown.
  14. Cool completely before storing in an airtight container.
  15. Repeat with the remaining potato slices, using more parchment.
  16. If you are baking them, you will want to bake them for 20-30 minutes.
  17. If making a lot, this will take time for successive baking sheets.
  18. When the chips are done, place in a airtight container.
